Paramount is able to offer Stash members the lowest price which ensures our guests do not have to choose between spending less or supporting brands like ours. Paramount fits perfectly into Stash’s roster of 200 independent, carefully curated member hotels. We’re in good company among some of the best rated, most interesting boutique hotels from around the country—custom-made brands like us that value providing a distinctive experience to their customers. By aligning with Stash, we are standing shoulder to shoulder with hoteliers that pride themselves on providing the same kind of experience as we do. Part of our partnership with Stash is to educate customers who may not recognize that by booking though an outside website, they are substantially undercutting the profitability of companies like Paramount. Rather than spending our profits paying outside booking sites’ exorbitant fees, we’d rather charge lower rates for stays while improving our guests’ experiences. Korean Modern Cuisine
With a focus on bringing traditional Korean dishes into a new light by integrating Western ingredients and Modernist techniques, Chef Park’s restaurant is a favorite amongst locals and travelers alike. A native of South Korea, Chef Park grew up a world traveler living in places such as Malaysia and Switzerland prior to moving to the United States. Chef Park was first exposed to the restaurant business while working at his parent’s Japanese restaurant in Anchorage, Alaska. Chef Park attended culinary school at the Art Institute in Seattle specializing in French and Italian cuisine and opened Chan in 2012 which quickly garnered praise from critics and diners alike. In the fall of 2022, Chef Park relocated Chan Seattle the larger, completely updated space within the Paramount Hotel Seattle to serve more hungry customers. It remains the only modern Korean restaurant in downtown Seattle and is a favorite of locals and travelers alike.

Repeatedly named as one of the best places to grab breakfast, Maui’s locally loved Kihei Caffe Hawaiian-style diner offers a morning menu worth waking up for. Slept in? No worries. Its lunch and dinner fare are also too good to miss. Kihei Caffe opened its doors in the Kalama Park Village Shopping Center in 1998. Located on the south shore of Maui in the Maui Coast Hotel, it captures the ever-laid-back essence of Kihei. 
Kihei Caffe also operate the hotel’s Hanohano pool bar serving margaritas, mojitos, and lighter poolside fare and hosts nightly live local music.

Experience Maui’s can’t-be-missed south-side sushi that’s as fresh and delicious as it is beautiful. New to the Maui Coast Hotel in Spring of 2024, guests are guaranteed to discover breathtaking artistry and service as well as Miso Phat’s delectable high-quality hand-picked fish. It offers a variety of nigiri and sashimi as well as specialty sushi rolls and temaki hand rolls. Miso Phat is family-owned and headed by Joy Steadman.

Spruce espresso bar and breakfast cafe was opened in the fall of 2022 just off the lobby of the Paramount Hotel Seattle. In addition to fresh baked pastries, Spruce offers omelets, oatmeal and porridge, benedicts, classic breakfasts, sandwiches, and a short rib hash. Savory bloody marys, mimosas and Irish coffees are available as well as juices, coffees and a full espresso bar. Open 7 a.m. to 11 a.m. each day, Spruce has quickly become a favorite of not just the hotel’s guests, but of locals too.

Swine Bar takes a step back to the days of prohibition. Surrounded in natural wood and elements that depict the art of moonshine, Swine offers a casual, yet vivacious atmosphere right off the Paramount Hotel Portland’s lobby. Its menu is a culmination of creative comfort food that can be shared and inventive craft cocktails utilizing local spirits. Swine offers an early and late-night happy hour as well as small plates from open to close. Whether a seasoned pro or a newbie to the whiskey world, the Whole Hog Whiskey Club offers members early access to whiskey dinners, tastings, classes and events.

Situated off the Paramount Hotel Portland’s lobby, Taylor Street Tavern offers a unique dining space. The modern-meets-vintage decor features crystal chandeliers, antique mirror accents, black and gray velvet undertones and serves as the perfect backdrop to a menu of NW favorites and throwbacks to an earlier era. The menu is a culmination of creative comfort food and handcrafted cocktails that are second to none. Taylor Street Tavern offers breakfast, happy hour, and dinner.

Located in the lobby of the brand-new Maui Coast Hotel’s Kai tower, the Ma’alahi market employs Amazon’s Just-Walk-Out technology, the first such store in any hotel. Ma’alahi means simplicity, and the market offers 24/7 self-service access to sundries, grab-n-go goodies, beer and wine, hot coffee and more.
